Strawberry-banana sandwich with peanut butter spread and chocolate chips

Two months ago, Jeff brought home a loaf of buttermilk bread that he bought from Smith’s. I love the texture and the taste and immediate paired it with cream cheese.

I was content.

A week later, Jeff came home with a bunch of bananas. Around two or three of the yellow fruit stayed in the basket for week and was overripe so I decided to do something with them.

Nope, not banana cake.

I checked the fridge and our cupboard and found the buttermilk bread, peanut butter, butter, strawberries, and chocolate chip cookies to go with the bananas.

The result is the recipe below which is now my go-to snack. I pair this with lemon-infused water either hot or cold.

  1. This is a very simple recipe that only requires slicing and spreading and frying (actually, more like grilling).
  2. Slice each strawberry lengthwise. You should have four slices from one strawberry (or 16 slices in all).
  3. Slice the banana crosswise into rounds. Feel free to decide on the desired thickness or thinness.
  4. Arrange sliced bread on a plate. Spread generous amount of peanut butter on the first sliced bread.
  5. Alternately arrange slices of strawberry and banana. Sprinkle with chocolate chip cookies. Do this for each layer until you used up all four sliced bread.
  6. Heat up nonstick pan with butter. Fry each side of the sandwich until golden brown.
  7. Serve warm with a glass of lemon-infused water.
